Buttermilk Pancakes



My boys are pancake connoisseurs.  "Stevie's" are the bar to which all others are compared. How could I resist a recipe hailed as the 'best pancake ever' according to Southern Living magazine? After all, buttermilk was on hand after baking the German Chocolate Cake. 

One bite in, they both agreed - these are good, really good.  Better than Stevie's?  They wouldn't go that far....just different. 

Your weekend needs these, you will thank me later. 


BUTTERMILK PANCAKES

Recipe courtesy of Southern Living

1 3/4 cup flour

2 tsp sugar

1 1/2 tsp baking powder

1 tsp baking soda

1 tsp table salt

2 cups buttermilk

2 large eggs

1/4 cup butter, melted

Stir together flour and next 4 ingredients in large bowl.  Whisk together buttermilk and eggs; gradually stir into flour mixture.  Gently stir in butter.  (Batter will be lumpy).  Let stand 5 minutes. Pour about 1/4 cup batter for each pancake onto a hot (350°) buttered griddle.  Cook pancakes 3 to 4 minutes or until tops are covered with bubbles and edges look dry and cooked.  Turn and cook 3 to 4 minutes or until brown.  Place pancakes in single layer on baking sheet and keep warm in 200° oven up to 30 minutes.

Sour Cream Coffee Cake



Nothing better with a chill in the air than waking up to coffee cake...this one is dense, moist and not-too-sweet. Perfect for a weekend morning with a cup of coffee and newspaper.  

Doesn't it look pretty?  The confession:  the rest of the cake did not want to leave the bundt pan in a proper fashion.  It was slightly mangled and disheveled but did not deter my family from consuming.  The pecans are partially the key to not having the gooey sugar stick to the pan (I omitted due to family preference) and removing from bundt pan in timely manner.


SOUR CREAM COFFEE CAKE

1 cup butter (room temperature) 

3 cups sugar

6 eggs

1/4 tsp salt

1/4 tsp baking soda

3 cups flour

1 cup sour cream

1 tsp vanilla

Topping / filling:

2 cups chopped pecans

8 T dark brown sugar

4 tsp cinnamon

Grease bundt or tube pan.  Mix topping ingredients together. 

Cream butter and sugar until fluffy.  Add eggs one at a time, beating after each one.  Add vanilla. Mix or sift together salt, soda, and flour.  Alternating, add flour mixture and sour cream.  Sprinkle small amount of topping ingredients on bottom of pan; add half of batter.  Sprinkle more topping and add remaining batter.  End with a sprinkling of topping.  

Bake at 300 degrees for ~ 1 1/2 hours.   Allow to cool slightly (10 minutes) and remove from pan.

Caramel Rolls



Scan to the bottom of the recipe - yes, the caramel is composed of vanilla ice cream.  Vanilla ice cream boiled with butter and brown sugar.  Tempted?  I believe this ooey gooey caramel has potential way beyond these little rolls.  

The dough.  Lots of options: Make your own bread dough, purchase frozen loaves or swing by your local Whole Foods and grab a couple pounds of fresh pizza dough.  There's no wrong answer. 

My family loved these for breakfast.  Into the evening one of my sons said, "How about I just warm them up and put ice cream on top for dessert?"  Apparently it was delicious.  Should I tag this breakfast, dessert or both?  I'm leaving it as breakfast but feel free to make it into dessert. 


CARAMEL ROLLS

2 lbs bread dough - if using frozen, thaw prior to using 

1/2 cup butter or margarine

1 cup vanilla ice cream

1 cup brown sugar

Cinnamon & sugar

Grease 9 x 13 pan.  Tear the dough into small balls; roll each ball mixture of cinnamon and sugar.  Place in the pan.  Over medium heat, boil the butter, ice cream and brown sugar together.  Let cool.  Pour over the bread dough .  Cover and let rise overnight. 

Bake at 350 for 20-25 minutes.

Stevie Pancakes



This recipe comes from my uncle Steve (aka Stevie).  As the family lore goes, he got it from Parade magazine 25-30 years ago when it was listed one of the Best Pancakes in USA.   It was originally from a truck stop or little cafe somewhere in the Midwest.  The origins are a bit sketchy; the pancakes are not.  

I've made them nearly every weekend for my kids for the past decade.  They simply ask, "Will you make Stevie's?"  Yes.  Yes, I will. 


STEVIE PANCAKES

Warning:  Follow the directions as written.  The order is crucial to success.  

2 cups milk

1/4 cup vegetable oil

2 eggs

Dash of vanilla

Whisk the above together (in Steve's words, I kind of emulsify them).   Then whisk in until batter is smooth:

2 cup flour

2 T baking powder

4 T sugar

When batter is smooth, you are ready to drop on your prepared griddle.
